*Flavors in Color* is an ambitious project born from the idea of Paolo Palumbo and Luigi Pomata, with the essential contribution of the photographs by Pierluigi Dessì. It is a journey through a collection of recipes that make up a truly special cookbook.
For the first time, in fact, the dishes are conceived and created specifically for those who cannot eat naturally and must rely on puréed foods or tube feeding. It is therefore a cookbook that is easy to read yet helpful in everyday life, especially for those who—through no fault of their own—have lost the habit of enjoying the taste of food and the pleasure of the table.
This experience was made possible by the determination of an extraordinary young man who only recently discovered that he is one of the youngest patients in the world affected by ALS. Today, in Italy alone, 70,000 people suffer from dysphagia—a condition that has taken away their ability to eat normally—and it is for them that Paolo and Luigi created this book: the first, a novice cook with great passion to share; the second, a renowned internationally acclaimed chef.
However, this book can also be a valuable culinary resource for those who, fortunately, do not have to face the challenges of assisted nutrition.
