Luigi Pomata raconte son \u00eele faite de mer et de terre, d&rsquo;ingr\u00e9dients simples et d&rsquo;une grande connaissance de la mati\u00e8re premi\u00e8re : originaire de Carloforte, il poss\u00e8de un lien indissociable avec la mer qui lui vient de son grand-p\u00e8re, agriculteur et responsable de la tonnara de Carloforte, mais qui est tr\u00e8s vite pass\u00e9 dans la cuisine de ce qui est devenu le restaurant de la famille Pomata. Arriv\u00e9s \u00e0 la troisi\u00e8me g\u00e9n\u00e9ration, les Pomata perp\u00e9tuent aujourd&rsquo;hui une cuisine du terroir, au c\u0153ur de la M\u00e9diterran\u00e9e, forte d&rsquo;un ingr\u00e9dient, le thon, qui \u00e0 Carloforte se p\u00eache encore comme il y a deux cents ans, seulement pendant un mois et demi par an, pour des sp\u00e9cimens de 35 kilos et plus. Un poisson qui doit \u00eatre trait\u00e9 avec un soin extr\u00eame, avec toute la cr\u00e9ativit\u00e9 qu&rsquo;il m\u00e9rite et que Pomata a su exalter gr\u00e2ce aussi \u00e0 ses nombreuses exp\u00e9riences dans les cuisines du monde. Dans le livre comme au restaurant, tout commence par la mati\u00e8re premi\u00e8re, le thon.
