Serves 4:
- 400 g bluefin tuna loin,
- 200 g buffalo mozzarella,
- 30 g dried capers,
- 1 lemon,
- oil, salt, pepper,
- herbs for garnish
INSTRUCTIONS
Cut the tuna fillet into strips and then into small cubes. Chop with a knife to form the tartare, add salt, pepper, lemon zest and juice. Place the buffalo mozzarella and its water in a blender and blend until smooth, adding salt, pepper and a little oil. Arrange the tartare on a plate and add the buffalo mozzarella cream, dried capers and garnish with herbs.
